Raw cow's milk The story of Petit Gros Lorrain began in an attic when Philippe Marchand, heir to a family of Lorraine cheese makers and refiners for six generations, discovered a round mold made of fir wood. Inside is a notebook written by her grandmother's hand, detailing the complex maturing of Gros Lorrain, a centuries-old cheese from the Gérardmer region. The discovery delighted him all the more since the cheese had disappeared from circulation for more than half a century. Feeling invested with a mission, both for the memory of his grandmother, and for the love of the Lorrain terroir, the Master Affineur Philippe Marchand sets out to find a producer capable of taking up the challenge. He then met Frédéric, a farmer looking for new outlets to promote the milk from his farm. The idea of participating in the rebirth of a vanished cheese immediately appealed to him. This is how Gros Lorrain was recreated. Subsequently, Philippe Marchand had the idea of giving birth to the little brother of the Gros Lorrain: the Petit Gros Lorrain. |
