Tahini is a Middle Eastern spice made from ground roasted sesame shells. Tahini is made from sesame seeds soaked in water and then crushed to separate the bran from the kernel. Crushed seeds soaked in salt water sink the bran layer. The floating seeds are skimmed off the surface, toasted and ground to create an oily paste. It can also be prepared with unroasted seeds and is known as "raw tahini", sometimes sold as an organic food product. |
