The Brillat-Savarin is prepared with raw Cow’s milk and has a regular clear surface, soft texture along slightly acidic and sweet in taste. Hence, they are recommended mainly for acidic bread such as Pollan.
On the demand of some cheesemakers, Brillat-Savarin was created by the maker Excelsior. It is the earliest cheese enriched with fat, discovered at the end of the 19th century. The idea was to present a cheese that was much larger than the original one and suitable for a high-level gastronomic meal.
Brillat-Savarin uses the name of a French gourmand and a politician thanks to whom we owe this well-known quote "A meal without cheese is a beauty without a heart".
