Description

Mortadella is a specialty of the bologna region and is a national city in italy. leboni uses only italian pigs, which are made with finely ground pork and spices such as diced pork fat (lard), pistachios and pepper. mortadella, which is cooked in a casing for a long time at 85°c or less, has a very soft texture and a unique and rich flavor of pork and pistachio. when served, the casing is removed and sliced thinly (~1 mm), or the shape of wedges, dice, etc. can be applied. it can be served as is, with cheese on bread, or used in a variety of dishes such as sandwiches and pastas.
