Black Truffle (Tuber Melanosporum) is the most emblematic and legendary of all, the aroma of the black truffle stands out above all the rest. The season for this beautiful creature is from Mid-November until the mid of March. As these beautifully marbled truffles mature, their colour changes from mid-brown to a dark chocolate. When served with pasta or a risotto in the winter, the Tuber Melanosporum black truffles are sensational. A rich-flavoured roast, eggs dishes or smoked salmon and Hollandaise sauce can also be adorned with fresh black truffle shavings.
White Truffle (Tuber Magnatum) is the most rare and precious of all, with its characteristic garlicky scents. Gourmets are sure to enjoy this product, which combines excellent complexity and depth of flavour with an intense aroma, and a colour that varies from creamy to rich ochre. Available from October until end of December. White Truffle Tuber Magnatum are delicious for fettuccine with butter and Parmesan, scrambled eggs or a plain risotto.
Summer Truffle (Tuber Aestivum) this crisp truffle like to make sure it’s on everyone’s table at the first signs of summer. Can be found from April and until the end of August. By midsummer, the aroma of summer truffle Tuer Aestivum reveals a rich, earthy aroma which continues to deepen with the season. In May, the aroma is mild, with notes of hazelnut, and then deepens with the season. Take them to the next level by serving them with a risotto of king prawns with garlic or topping a seared steak with tiny shavings.
Australian Black Truffles (Tuber Melanosporum) has the soft scent of winter in the height of summer. Plan to enjoy it from June until end of August. The aroma of Australian Black Winter truffles is reminiscent of a mixture of garlic, forest floor, nuts, and chocolate. Among the foods that pair well with Australian Black truffles are herbs such as tarragon, parsley, basil, and oregano, mushrooms, roots vegetables, green beans, and aromatics such as garlic, shallots, and onions, fish, meats including beef, turkey, poultry, pork, and duck, and cheeses such as goat, parmesan and fontina.
Autumn Truffles (Tuber Uncinatum) a cousin of the summer truffle, its flesh is brown and its aromas, so subtle. The season for this truffle is from September until end of November. The flavour of Autumn Black Truffles is delicate with a hint of hazelnut. Outside colours range from light brown to dark brown and inside with notes of hazelnut.
